Pumpkin Spice Chocolate Chip Bread

Celebrate the flavors of fall and satisfy your chocolate cravings with this dense, delicious pumpkin bread. You'll be amazed at how quick and easy this bread is to make (it contains just six ingredients)! This recipe was created by FlapJacked Ambassador Ashley- and we can't get enough of it!


1 cup pumpkin puree
1/2 cup unsweetened applesauce
2 large eggs
1/4 cup brown sugar
2 cups FlapJacked Carrot Spice Protein Pancake & Baking Mix
1/2 cup chocolate chips

Pre-heat oven to 350˚. In a large bowl, combine pumpkin puree, applesauce and eggs and stir well. Add in brown sugar and stir again. Slowly add in FlapJacked mix and incorporate in with the other ingredients. Mix by hand with a spoon until a batter is formed. Add in the chocolate chips and stir to incorporate.

Pour the batter into a greased loaf pan and place in the oven. Bake for 45 minutes (test by putting a toothpick into the middle of the bread- when it comes out clean the bread is ready). Let cool for at least 15 minutes and serve or wrap in plastic wrap and store in the refrigerator for up to five days. ENJOY!
