Cherry Peach Cobbler

We LOVE summer fruits. When we think of summer, some of the first foods that come to mind are sweet cherries and juicy peaches fresh from the farmer's market. Both are great by themselves, but might be even better when incorporated into a delicious, warm cobbler. This recipe is so easy to make - and you can feel good about eating it (even with a scoop of vanilla ice cream!).

INGREDIENTS

  • 3 ripe peaches
  • 1 cup fresh cherries
  • 5 TBSP melted butter
  • 1 cup unsweetened almond milk (or any milk)
  • 1 tsp vanilla
  • 1/3 cup coconut or maple sugar (or brown sugar)
  • 1 cup FlapJacked Cinnamon Apple Protein Pancake mix (or any FlapJacked mix)*
  • 1 tsp baking powder

    *If using Buttermilk or Banana Hazelnut mix, add in 1/2 tsp cinnamon

FlaJacked Cherry Peach Cobbler Recipe

DIRECTIONS

  • Preheat oven to 350 degrees.
  • Cut peaches into thin slices. Pit cherries and slice in half. Set aside.
  • In a medium-sized bowl, combine melted butter, almond milk, vanilla and sugar. Add in FlapJacked mix and baking powder and stir until ingredients are well incorporated. Fold in sliced peaches and cherries.
  • Coat a 9x9" (or similar) baking dish with nonstick spray. Pour batter into the baking dish and bake until cobbler is lightly browned and completely set in the middle (about 50 minutes).
  • Remove and let cool for at least 10 minutes before serving. ENJOY!
