Bacon, Egg & Cheese Stuffed Waffles

You might not think of them this way, but waffles are a pretty excellent option for a breakfast on-the-go. The only challenge comes when you add on toppings like butter and syrup- which can create a sticky mess (and make it tough to eat with your hands!). We created this savory waffle that is perfect as is- no toppings required! Think of it as a delicious breakfast casserole- in the form of a waffle.

INGREDIENTS

  • 2 large eggs (or 1/2 cup liquid egg whites)
  • 2 pieces (cooked) turkey bacon, chopped into small pieces
  • 3/4 cups FlapJacked Buttermilk Protein Pancake Mix
  • 1/2 cup water
  • 1/4 cup shredded cheddar cheese
  • salt and pepper to taste

DIRECTIONS

  • Place a skillet over medium heat (and spray lightly with nonstick spray). Place both eggs into a small bowl and whisk with a fork for about 30 seconds. Pour eggs into the skillet and stir until cooked (to create scrambled eggs). Remove from heat and let cool for five minutes.
  • Meanwhile, pour the FlapJacked mix and water into a bowl. Stir together to create a thick batter. Stir in cheese, bacon and eggs and mix together well. Add in just a pinch of salt and pepper and stir again. Let batter sit while your waffle iron heats up.
  • When waffle iron is ready, coat with nonstick spray and pour 1/2 of the batter onto it and cook per manufacturer directions. Repeat with other half of the batter.
  • Serve immediately or store in a freezer-safe bag to re-heat later on. ENJOY!
