Jalapeño Honey Cornbread Waffles

There’s just something so comforting about cornbread. The warm, crunchy exterior that gives way to the slightly sweet, melt in your mouth goodness inside. We couldn’t help but take this classic comfort dish and kick it up a notch with some spice and a waffle iron. Top these with an egg and some melted cheese for an impressive savory and slightly sweet breakfast or whip up a batch and top it off with some chili for a satisfying dish the whole family will love.

INGREDIENTS

  • 1/2 cup FlapJacked Buttermilk Pancake & Baking Mix
  • 1/2 cup yellow cornmeal
  • 1/2-1 jalapeño (seeded and diced)
  • 1 tablespoon honey
  • 1 egg
  • 3/4-1 cup water (or milk) (this can be adjusted based on desired thickness)

Jalapeno Honey Cornbread Waffles

DIRECTIONS

  • Combine pancake mix and cornmeal in a large bowl.
  • Mix in egg, honey and water and whisk until well combined.
  • Fold in jalapeño until evenly mixed.
  • Let batter sit for 3 minutes while waffle iron heats up. Batter thickens as it sits.
  • When waffle iron is ready, place 1/2 cup size scoops of batter onto it and cook per manufacturer directions.
  • Repeat until all batter is used (you should have about 4 waffles total). ENJOY!
