Snickerdoodle Cookies

Snickerdoodles are one of our favorite classic cookie recipes- just biting into one gives us instant nostalgia! These cookies have all of the delicious cinnamon and sugar flavor you love without packing in quite as many calories as traditional recipes.


  • 2 1/4 cup FlapJacked Buttermilk Protein Pancake Mix
  • 2 tsp cream of tartar
  • 1/2 tsp cinnamon + 1 tsp (divided)
  • 3/4 cup (1-1/2 sticks) unsalted, softened butter
  • 2 large eggs
  • 3/4 cup + 2 TBSP sugar (divided)

  • Preheat oven to 350˚F.
  • Place FlapJacked mix, cream of tartar and 1/2 cinnamon into a large bowl and stir together with a whisk.
  • In another bowl, combine butter, eggs and 3/4 cup sugar and beat with an electric mixer until creamy. Slowly mix in the FlapJacked mixture and beat on low speed until mixed through completely.
  • Place the remaining sugar and cinnamon into a small bowl and set aside. Line a baking sheet with parchment paper or a silicone baking mat.
  • Take 1 tablespoon of dough and roll into a ball using your hands. Roll the top of the cookie dough ball into the cinnamon sugar mixture and place on the baking sheet. Repeat with the rest of the dough, spacing cookies about 2" apart.
  • Place in the oven and bake for 9-11 minutes (until edges are golden brown). Remove and let cool. ENJOY!
