Honey Vanilla Strawberry Waffles

There's a constant debate going on in our house that is yet to be settled. Which is better: pancakes or waffles? We love a big stack of FlapJacked pancakes fresh off the griddle, but a crispy-on-the-outside, chewy on the inside waffle can be just as delicious. Right now, we're having a love affair with this waffle recipe. It contains chunks of delicious strawberries in every bite and is sweet enough on its own (without adding any syrup).

  • Place the strawberries into a medium-sized bowl and heat in the microwave for 30 seconds. Remove and mash with a fork until almost liquified.
  • Stir in egg, vanilla and water and blend well. Add in FlapJacked mix and stir into the liquid. Add in honey and stir well until well incorporated.
  • Heat up your waffle iron. When waffle iron is ready, place 1/2 of the batter onto it and cook per manufacturer directions.
  • Repeat with the other half of batter. Serve immediately. Enjoy!
