Grilled Peach Protein Pancakes

Turn that pancake mix into a peachy brunch item!  Try this take on grilled peaches and cakes. Great served with sugar free syrup or honey.

INGREDIENTS
1 tsp Coconut Oil
2 Peaches (We used nectarines)
1 tsp Honey
1 cup FlapJacked Buttermilk Protein Pancake Mix
1-1/8 cup Water

INSTRUCTIONS
Fire up your grill to medium high.  While grill is warming up.  Melt the coconut oil in a small bowl. Cut the peaches into 1/8 pieces and toss in coconut oil. Place coated peach slices on the grill.

While peaches begin to grill, combine Buttermilk Protein Pancake Mix, water and honey. Mix well and let sit 3-5 minutes while you turn griddle onto low heat (275 - 285 degrees). Flip Peaches on the grill before pouring batter into pancakes using a 1/4 measuring cup. Let cook until no more bubbles are forming in the center and the edges look dry.  Flip and cook other side until golden brown.  (About 3 minutes per side) Remove Peaches from grill.  Serve on top of your pancakes with syrup or cut grilled peaches into 1/2's and place between layers of pancakes. ENJOY!
