Fluffy Japanese Protein Pancakes

Fluffy Japanese Protein Pancakes

DIRECTIONS

  • Combine egg yolks, sugar, milk, and pancake mix in a bowl until all large lumps are gone.
  • In a second bowl, use a hand mixer to beat egg whites until stiff peaks form when lifted up.
  • Slowly fold egg whites into pancake batter, just until combined. Be careful not to over mix it.
  • Lightly spray 3.5-inch metal ring molds with non-stick spray.
  • Place them in the middle of a pan on low heat. Fill molds ¾ of the way with the pancake batter.
  • Cover pan and cook for 8-10 minutes, or until the center of the pancakes are a little jiggly.
  • Carefully slide spatula under the pancake and flip it. Cover and cook for about 5 more minutes.
  • Serve with fresh fruit, a drizzle of syrup, or whatever your belly tells you to! 😉
