1 TBSP Coconut Oil, softened
1 Cup Orange Juice
1 Cup FlapJacked Buttermilk Protein Pancake Mix
Zest from one large orange
1/2 cup Dried Cranberries (finely chopped)
Serving Size: 1 muffin
Preheat oven to 400. Grease a non-stick muffin pan (or use paper or foil muffin liners). Mix all ingredients with a mixer on low for 30 seconds, then on high for 1 minute. Pour evenly into 8 muffins. Bake in pre-heated muffin pan for 12-15 minutes. Enjoy! ENJOY!
