Old Fashioned Crumpets

If tea had a soul-mate, it would most definitely be the Crumpet. Sit down for a tea time treat with this simple, satisfying afternoon delight. Serve warm, golden brown, and topped with spiced berries, honey and Greek yogurt. Your guests will be sure to come back for more!

  • 3½ oz fat-free Greek yogurt
  • 5½ oz ripe strawberries, hulled and sliced
  • 2oz raspberries
  • 2oz blueberries
  • 2 pinches ground cinnamon spice
  • 2 tsp honey for drizzling

Crumpets with Spiced Berries


  • Mix yeast with 3 tablespoons of the warm water and stir until dissolved. Let set for 5 minutes.
  • In a secondary bowl, add the salt, then sift in the FlapJacked mix.
  • Whisk around 2/3 of the remaining water into the mix, and then add the yeast mixture.
  • Cover mixture and leave in warm place for about 1 hour.
  • The mixture should double in thickness and be easy to pour. Add extra water if necessary.
  • Lightly spray the heated frying pan with canola oil, then grease egg or crumpet rings with canola spray. Place the rings onto the pan and pour the batter to 1/2 full.
  • Cook until small holes appear on top of crumpets (about 4 minutes). Take off the rings and flip the crumpet until brown. Remove from heat and place onto plates.
  • Place a non-stick frying pan over a medium-high heat and add all the fruit. Sprinkle with ground cinnamon spice and cook for just a minute, tossing regularly until the fruit is softened but still holding its shape.
  • Spoon the fruit and yogurt over the crumpets and drizzle with a little honey. Enjoy!
