Cranberry Walnut Crackers

FlapJacked mixes aren't just for making pancakes- and we've developed this recipe for tasty, slightly sweet crackers using our Cinnamon Apple flavor. These crackers are easy to make and difficult to stop eating! It's the perfect recipe for a healthy, portable snack to take anywhere you want to go (or just enjoy at your kitchen table!).

INGREDIENTS

  • 1 cup FlapJacked Cinnamon Apple Protein Pancake Mix
  • 1/4 cup oat flour
  • 1 tbsp melted coconut oil
  • 1/4 tsp baking soda
  • 1/2 cup water
  • 1/4 cup dried cranberries
  • 2 tbsp chopped walnuts
  • 1 tbsp maple sugar (optional)
  • nonstick cooking spray

DIRECTIONS

  • Preheat oven to 375 degrees.
  • In a medium bowl, combine FlapJacked Pancake mix, oat flour and baking soda. baking soda. Add in melted coconut oil and stir. Slowly add in water and stir until well absorbed. The batter should be somewhat dry (not sticky) and easily able to form into a ball. Add in cranberries and walnuts and mix together well.
  • Form dough into a ball and place on top of a silicon baking mat (or parchment paper) and cover with a large piece of plastic wrap. Use a rolling pin to flatten out the dough until it's about about 1/8" thick. Lightly spray the dough using nonstick spray and sprinkle maple sugar evenly over the top.
  • Use a sharp knife or pizza cutter to cut the dough into rectangles about 1.5" x 2" in size (should make about 32 crackers total). Place in the oven and bake for 12 minutes (edges should be slightly golden brown).
  • Remove from oven and let cool for at least 10 minutes on a wire baking rack before serving. ENJOY!
