Green Smoothie Pancakes

Kelly, creator of the blog Nosh and Nourish is known for creating delicious recipes that are secretly healthy! When she shared her recipe for Green Smoothie Pancakes and we instantly fell in love. All of the nutrition from a green smoothie in the form of a pancake? Yes, please!

INGREDIENTS

  • Serving Size:   2 pancakes
  • Servings:   5
  • Calories:   142
  • Fat:   4g
  • Carbs:   19g
  • Fiber:   4g
  • Sugar:   8g
  • Protein:   9g

DIRECTIONS

  • Combine all the ingredients except the pancake mix into a medium-sized bowl.. Use an immersion blender (or regular blender) to puree the ingredients until smooth.
  • Stir in the pancake mix. Let batter sit for a few minutes while you heat a large skillet over medium-low heat. Lightly coat the skillet with non-stick spray and pour the batter into small 3-4 inch circles.
  • When the pancakes start bubbling a bit and the bottom is lightly browned, flip them over and continue cooking for about a minute on the other side. (If batter thickens too much, add a little more almond milk or water.)
  • Serve warm with syrup - ENJOY!
