If you like tart, you'll love this take on sweet/sour cherries with a sweet yet tart greek yogurt maple topping.
1 tsp pure vanilla
2 TBSP Almond Meal (or finely chopped or ground RAW almonds)
1/4 Cup Cherries finely chopped (about 8-10 cherries)
1 Cup FlapJacked Buttermilk Protein Pancake Mix
1 Cup + 1TBSP Water
1/4 Cup nonfat greek yogurt
2 tsp maple syrup
1 tsp vanilla
Serving Size: 4 pancakes
Combine Dry Ingredients (FlapJacked Pancake mix, cherries, almond meal.) Add water and vanilla, mix well and let sit 5-8 minutes while you turn griddle onto low heat (275 - 285 degrees). (batter will start to form bubbles and thicken.) Use a 1/4 measuring cup to pour batter into 10 pancakes. Let cook until no more bubbles are forming in the center and the edges look dry. Flip and cook other side until golden brown. (About 3-4 minutes per side) For topping, mix all ingredients until well combined. Pour over stack of pancakes. ENJOY!
