Yes, you can! If a whole muffin is too much, we suggest making half a muffin. Simply, pour half the muffin mix into a plastic bag to save for later and cook the rest using 1/8 cup of water instead of 1/4 cup. When you're ready to make the saved batch you can use a microwave-safe coffee mug.
The Mighty Muffin was developed for cooking in a microwave, however; If no microwave is available, the muffin may be baked in a muffin pan. Pour dry mix from container into the dish, stir in 1/4 cup water (add an additional 1TBSP for Cinnamon Apple flavor), spray a muffin pan with non-stick spray or insert muffin liners, pour batter into two even muffins and bake in a pre-heated oven at 350 degrees for 11-12 minutes. Time may vary.
