Snickerdoodle Mini Muffins

Get rolling towards cinnamon-y sugared goodness with these Snickerdoodle Mini Muffins, made from our Cinnamon Apple Mighty Muffins! It's a bite sized snack that is sure to leave you feeling satisfied 😋

COATING INGREDIENTS

  • ¼ cup cane sugar
  • 2 tsp ground cinnamon
  • 2 tbsp unsalted butter, melted

Snickerdoodle Mini Muffins

DIRECTIONS

  • Preheat your oven to 350˚ (175°C). Spray a mini muffin pan with cooking spray and set aside.
  • In a large bowl, whisk together the water, applesauce, melted butter, eggs, and vanilla extract.
  • Add the contents of the FlapJacked Cinnamon Apple Mighty Muffin containers and whisk until completely smooth.
  • Use a small cookie scoop to scoop the batter into the prepared muffin pan. Bake for 18-20 minutes, or until the surface of the muffins spring back when tapped.
  • Let cool slightly in the pan, then transfer the muffins to a cooling rack to cool completely.
  • In a medium-sized bowl, whisk together the sugar and cinnamon.
  • Brush the melted butter over the muffins and toss them, one at a time, in the cinnamon-sugar until coated.
  • Enjoy!
