Cookie Crumb Protein Bites

Lindsay Cotter is not only one of our favorite bloggers- she's also a FlapJacked Amabassador. Lindsay and is known for creating protein and flavor-packed Healthy Bites. We adapted one of our favorite healthy bites recipes to create these delicious Cookie Crumb Protein Bites using FlapJacked Banana Hazelnut mix. These are perfect for an afternoon snack, before or after a workout or when you want to enjoy just a bite of cookie flavor.

INGREDIENTS

  • 2/3 cup FlapJacked Banana Hazelnut Protein Pancake Mix
  • 1/3 cup vanilla protein powder
  • 1/3 cup coconut peanut butter
  • 1/3 cup honey
  • 1 tsp coconut extract
  • 1 TBSP cold water
  • 1/3 cup crushed cookies (we used Lucy's Gluten Free Chocolate Chip)
  • (optional) chocolate chips, nuts, coconut flakes, dried fruit, etc.

DIRECTIONS

  • Whisk the FlapJacked mix and protein powder together in a medium bowl. Add in the peanut butter, honey and coconut extract and stir. Mix in water and stir again. Add in crushed cookies and use your hands to mix into the dough. Using a tablespoon, scoop out a rounded tablespoon of batter and roll into a ball using your palms. Repeat until dough is gone- you will have about 20 bites. Store the bites in a sealed container in the refrigerator or freezer. ENJOY!
