Spiced Graham Crackers

These delicious graham crackers are the perfect base for a tasty, gooey s'more. They're also great for dunking in milk or coffee and can be made with either our Carrot Spice or Cinnamon Apple Protein Pancake & Baking Mix. 


1-1/4 cups FlapJacked Carrot Spice or Cinnamon Apple Mix
2 TBSP butter
2 egg whites, divided
1/4 cup (un-packed) brown sugar
2 TBSP honey
1 tsp vanilla
1/2 tsp cinnamon
sugar for sprinkling (about 1 TBSP)

Pre-heat oven to 350˚. Place FlapJacked mix and butter into a bowl. Using your fingers, work the butter through the mix until it's incorporated all the way through. Add in 1 egg white, brown sugar, honey, vanilla and cinnamon and stir using a spoon until you have a thick batter.

Liberally coat 2 large sheets of wax with nonstick spray. Place the dough onto one sheet and cover with the other sheet (spray side touching the dough). Use a rolling pin to roll the dough out into a thin (about 1/8") layer. Remove the top layer of wax paper and cut the dough into 12 equal pieces. Gently move each piece onto a cookie sheet lined with parchment paper (place about 1" apart). Brush each cracker with the remaining egg white and sprinkle sugar lightly on top. Place in the oven and cook for 12-14 minutes (edges will be golden brown). Remove and let cool. ENJOY!
