Spiced Apple Oat Bread

We created this quick bread recipe to satisfy our cravings for fall flavors like apples, cinnamon and nutmeg. This bread provides delicious chunks of apples with every bite. Eat it plain or toasted with melted butter or almond butter spread on top. For a little extra burst of flavor, mix in 1/2 cup of raisins or dried cranberries into the batter. 

FlapJacked Spiced Apple Oat Bread Recipe


1 1/2 cups FlapJacked Cinnamon Apple Protein Pancake Mix
3/4 cup + 2 TBSP (divided) multigrain oats
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground cloves
1 tsp baking soda
1 tsp vanilla extract
1/3 cup low-fat plain Greek yogurt
1/3 cup applesauce
3 eggs, beaten
1/2 cup unsweetened almond milk
1/4 cup Truvia Baking Blend (or 1/2 cup sugar)
1/4 cup chopped walnuts
2 cups chopped apples (about 2 medium apples chopped into 1/4" cubes)

Pre-heat oven to 350˚. In a large bowl, combine FlapJacked mix, 3/4 cup oats, cinnamon, nutmeg, cloves and baking powder. In a medium sized bowl, combine the yogurt, applesauce, eggs, almond milk and stevia blend. Mix by hand with a spoon until ingredients are well incorporated. Stir in the chopped apples and walnuts. Add the contents from the medium bowl to the large bowl and stir well for about two minutes until you have a smooth, wet batter. Pour the batter into a greased loaf pan and place in the oven. Sprinkle the remaining 2 TBSP oats on top of the batter. Bake for 50 minutes (test by putting a toothpick into the middle of the bread- when it comes out clean the bread is ready). Serve immediately or wrap in plastic wrap and store in the refrigerator for up to one week. ENJOY!
