INSTRUCTIONS Place apricots and dates into a food processor. Blend for about 20 seconds to break down the fruits a bit. Add in FlapJacked mix, cinnamon and coconut and blend for 30 seconds (scrape the sides if ingredients stick). Add in honey and cashew butter and blend for another 30-60 seconds (scraping sides if needed). Finally add in cashews and pulse a few times just to break them up a bit. Lightly coat a 9"x9" baking dish with nonstick spray. Scoop out the mixture from the food processor and flatten down (using a spatula) to touch all edges of the baking dish. Place the the chocolate chips in a glass dish and melt in the microwave (heating for 2 minutes and stirring a few times). Pour the chocolate overtop of the apricot mixture and spread evenly to coat. Place in the refrigerator for one hour. Remove and cut into 16 equal squares. Store bars in the refrigerator in an air-tight container or wrap in plastic. ENJOY!
