Honey Vanilla Strawberry Waffles

There's a constant debate going on in our house that is yet to be settled. Which is better: pancakes or waffles? We love a big stack of FlapJacked pancakes fresh off the griddle, but a crispy-on-the-outside, chewy on the inside waffle can be just as delicious. Right now, we're having a love affair with this waffle recipe. It contains chunks of delicious strawberries in every bite and is sweet enough on its own (without adding any syrup).

INGREDIENTS
4 large strawberries
1 egg
1/2 tsp pure vanilla extract
1TBSP honey
1/4 cups water 
1 cup FlapJacked Protein Pancake Mix

INSTRUCTIONS:
Place the strawberries into a medium-sized bowl and heat in the microwave for 30 seconds. Remove and mash with a fork until almost liquified. Stir in egg, vanilla and water and blend well. Add in FlapJacked mix and stir into the liquid. Add in honey and stir well until well incorporated. Heat up your waffle iron. When waffle iron is ready, place 1/2 of the batter onto it and cook per manufacturer directions. Repeat with the other half of batter. Serve immediately. Enjoy!
