Herbed Flatbread Pizza

To say that we love pizza is a bit of an understatement. It's one of our favorite foods and while we definitely believe in indulging every once in a while, we're not totally keen on the amount of calories that the average serving of pizza contains. Pizza is typically high in fat, carbs and doesn't offer much to help reach your daily recommended amount of fiber. We wanted to create a simple, healthier version of this delicious meal that made us feel as good as it tastes.

This flavorful, flaky flatbread is super easy to make and serves as a great vehicle for "build your own pizza night" in our home. It cuts the calories dramatically from your standard slice of pizza and contains a good amount of protein and fiber to keep you feeling satisfied (without feeling weighed down).


1 packet dry yeast
3/4 c. + 1 tbsp warm water (around 110˚)
1+1/4 c. FlapJacked Buttermilk Protein Pancake Mix
1 c pastry flour (plus more for dusting)
1 tsp olive oil
2 tbsp dried Italian herbs (Italian seasoning)

1/4 c pizza sauce
1 oz fresh mozzarella cheese
1 sprig fresh basil

Pour water and yeast into a medium-sized bowl and stir. Let sit for about ten minutes, or until yeast is dissolved. Add the FlapJacked Buttermilk Protein Pancake Mix and pastry flour to the bowl- about 1/2 cup at time and mix together with a fork. Continue to mix the dough for several minutes (or transfer into a food processor to knead). The dough should be sticky (if it's too sticky to work with, add a little bit more flour). Shape dough into a ball and drizzle olive oil over the top, coating the entire ball of dough. Place a kitchen towel over the bowl and let sit for an hour. Check the dough after an hour- it should have risen slightly. Pour the dried herbs into the bowl and knead the dough again to incorporate the herbs.

Preheat oven to 375˚. Transfer the dough onto a lightly floured surface and divide it into 6 equal pieces (a little larger than the size of a golf ball). Flatten each piece out (by hand or with a rolling pin) into a long oval shape. The dough should be about 1/8" thick. For plain flatbread, bake for 12-14 minutes (edges should be golden brown. To make flatbread pizza, top each flatbread with desired toppings and place in the oven for 15-17 minutes. ENJOY!
