Green Smoothie Pancakes

 

INGREDIENTS
2 cups fresh spinach 
3/4 cup unsweetened vanilla almond milk 
1 TBSP Ground Flax
1 TBSP Peanut Butter
small banana
1 tablespoon Maple Syrup
1 cup FlapJacked Buttermilk Protein Pancake Mix

INSTRUCTIONS
Combine all the ingredients except the pancake mix into a medium-sized bowl.. Use an immersion blender (or regular blender) to puree the ingredients until smooth. Stir in the pancake mix. Let batter sit for a few minutes while you heat a large skillet over medium-low heat. Lightly coat the skillet with non-stick spray and pour the batter into small 3-4 inch circles. When the pancakes start bubbling a bit and the bottom is lightly browned, flip them over and continue cooking for about a minute on the other side. (If batter thickens too much, add a little more almond milk or water.) Serve warm with syrup- ENJOY!
