Crunchy Apple Carrot Cobbler Pancakes

Turn that pancake mix into a delicious, healthy indulgence!  Try this take on Apple Cobbler ---OR--- Just make this delicious take on the pancakes themselves. 

FlapJacked Crunchy Apple Carrot Cobbler Protein Pancake Recipe

 

INGREDIENTS (for apple crisp topping)
4-6 Large Honey Crisp Apples
1/4 Cup Brown cane sugar (or coconut sugar)
3 TBSP Butter or margarine (softened)
1/4 Cup Whole Oats
1 tsp Cinnamon

INGREDIENTS (for crunchy pancakes)
1 Cup FlapJacked Cinnamon Apple Protein Pancake Mix
1/2 Cup Skim or Fat Free Milk
1/2 Cup unsweetened applesauce
1/2 Cup Granola (any kind)

INSTRUCTIONS
Preheat oven to 350 degrees.  Combine Brown Sugar, Butter, oats and cinnamon in a small bowl and set aside. Peel, core and slice apples and place into an ungreased 8x8 non stick pan.  Sprinkle prepared topping and bake for 30 minutes or until fruit is tender and toping is golden.  Set aside to cool while you make the pancakes.

Combine FlapJacked Pancake mix, Milk and Apple/Carrot sauce.  Set aside and turn griddle onto low heat (275 - 285 degrees) and let sit for 3-5 minutes. (batter will start to form bubbles and thicken.)  Pour batter into 6 even pancakes.  Sprinkle each pancake with about 1 heaping TSP of granola before cooked.  Let cook until no more bubbles are forming in the center and the edges look dry.  Flip and cook other side until golden brown.  (About 3 minutes per side).
