Cocoa Peppermint Cookies

What's better than a chewy, delicious cookie bursting with peppermint flavor? One that's lower in fat, sugar and carbohydrates- and still tastes great! Our cocoa peppermint cookies are perfect to bake for the holiday season and can be enjoyed all year long!


6 TBSP butter (softened)
1/4 cup brown sugar
1 dropper full NuNaturals Liquid Peppermint NuStevia*
1 tsp vanilla extract
1 large egg
2 TBSP milk
1 cup FlapJacked Buttermilk Protein Pancake Mix
1/2 cup unsweetened cocoa powder
1/2 cup white chocolate chips
1/2 cup crushed peppermint candy cane pieces

*Can sub for 1/4 cup raw sugar + 1 tsp peppermint extract

Preheat oven to 350˚. Cream butter, sugar and stevia together in a large bowl. Add in egg and milk and blend together. Stir in Buttermilk mix, followed by cocoa powder and mix to create a smooth, thick batter. Gently fold in white chocolate chips and candy cane pieces. Drop a rounded tablespoon of batter onto lightly greased cookie sheet about 2" apart. Bake for 10-12 minutes (until edges are crisp). ENJOY!
