Chewy Peanut Butter Cookies

Are you a peanut butter addict? We've got a solution for you! These chewy peanut butter cookies are full of that nutty flavor that we all love- but are way better for you than the traditional recipe! We created two versions of the recipe to help you choose the amount of carbohydrates and sugar that you're looking for: one using Truvia Baking Blend and the other using sugar. Each cookie has a boost of protein, healthy fats and tastes delicious!

FlapJacked Chewy Peanut Butter Cookies Recipe


1 cup creamy natural peanut butter
1/2 cup 2% milk
1 tsp vanilla extract
2 eggs
1/2 cup Truvia Baking Blend (or 1 cup sugar)
2-1/2 cups FlapJacked Buttermilk Mix

Pre-heat oven to 375˚. Combine peanut butter and milk into a large bowl and stir well. Add in vanilla extract, eggs and sugar and stir until combined. Slowly add in FlapJacked mix and blend until you have a thick batter. 

Coat baking sheet(s) with nonstick spray of line with a silicon baking mat. Scoop out a rounded tablespoon full of dough and round into a ball with your fingers. (If batter is too sticky dip your fingers in water.) Place on a baking sheet and repeat with the rest of the dough. Dip a fork in water and smoosh down onto each ball of dough twice, making a criss-cross pattern. Place baking sheet(s) into the oven and bake for 8 minutes (bottoms of cookies will be golden brown). Let cookies cool for a few minutes before eating. Enjoy!
