Carrot Cheesecake Swirl Bars

We combined the flavors of carrot cake and cheesecake to create these delicious, cake-like bars. Enjoy for breakfast, a snack or dessert!



Carrot Cake Batter:
1 cup 2% milk
1 large egg
2 TBSP canola or vegatable oil
2 cups FlapJacked Carrot Spice Mix

Cheesecake swirl:
1/4 cup plain Greek yogurt
4 oz. cream cheese/Greek yogurt blend (or light cream cheese), softened
1 large egg
3 TBSP Truvia Baking Blend
1/2 tsp vanilla extract
2 TBSP FlapJacked Carrot Spice Mix

Pre-heat oven to 325˚. In a large bowl, make the carrot cake batter. Whisk together the milk, egg and canola oil. Add in FlapJacked Mix and stir together until all ingredients are well incorporated. Set aside and prepare the cheesecake swirl.

In another bowl, combine all of the ingredients, minus the baking mix, for the cheesecake swirl. Use a hand mixer (on medium speed) for about a minute to mix the ingredients together. Add in the mix and stir with a spoon to incorporate.

Coat a 9x9" baking dish liberally with nonstick spray. Pour one half of the carrot cake mix into the dish and spread out to reach all edges. Place one half of the cheesecake mixture on top of the batter in small circle. Use a butter knife to make swirl patterns throughout the batter. Repeat this by pouring the rest of the carrot cake batter on top, followed by the cheesecake mixture (into circles) and make swirls again. Place in the oven and bake for 30-32 minutes. Remove and let cool and slice into 16 equal pieces. ENJOY!
