Caramelized Banana Fritters

This decadent treat is the perfect sweet little bite. Add a scoop of vanilla ice cream into a bowl with a few of these fritters, and you've got the perfect crowd-pleasing dessert!


2 large, ripe bananas
2/3 cup FlapJacked Banana Hazelnut Mix
1/4 cup milk (we used skim)
1/4 cup unpacked brown sugar
2 TBSP coconut oil

Place the bananas into a large bowl and use a fork to mash completely. Add in the FlapJacked mix and milk and stir well. Add in the brown sugar and stir again.

Place a large skillet over medium-low heat. Add in coconut oil and let melt to coat the pan. Place 1 TBSP size heaps of batter into the heated coconut oil (the batter should sizzle!) and repeat to use the rest of the batter (you should have about 24 fritters). Cook for about two minutes and flip (fritter should be golden brown). Cook for another minute, until cooked all the way through. Place fritters onto a paper towel to soak up excess oil. Serve immediately. Optional: sprinkle powdered sugar on top. ENJOY!
