Bananas Foster Doughnuts

Bananas Fosters is one of our favorite decadent desserts. We created a much healthier version and packed it inside of a doughnut that's higher in protein and lower in calories.

FlapJacked Bananas Foster Doughnuts Recipe


2 TBSP butter
2 large bananas
1/4 cup (unpacked) brown sugar
1/4 tsp nutmeg
1/2 tsp cinnamon
1 tsp rum extract
1 egg
1/3 cup almond milk
1/3 cup 2% plain Greek yogurt
1-1/2 cup FlapJacked Banana Hazelnut Protein Pancake Mix
1/4 tsp baking powder
powdered sugar, for sprinkling (optional)

Place a skillet over medium heat. Place butter in skillet and let it melt. While butter is melting, chop bananas into small pieces. Place bananas in skillet and stir (coating with butter). Add in brown sugar, nutmeg, cinnamon and rum extract and stir well. Let cook for 2 minutes on medium heat, then reduce heat to low. Cook for an additional 5 minutes, stirring occasionally (bananas should be soft and caramelized). Remove from heat and set aside.

Pre-heat oven to 350˚. Combine egg, almond milk and Greek yogurt into a large bowl and stir. Add in FlapJacked mix and baking powder and stir until blended. Stir caramelized banana mixture into batter until well incorporated. Use a spoon to dollop batter into a liberally greased doughnut pan (nonstick spray works fine). Batter should fill doughnut pan to the center (but not cover it).  Bake for 10-11 minutes, or until doughnuts are cooked through. Let doughnuts cool and sprinkle powdered sugar over top (if desired).
