Banana-Chip Protein Muffin Tops

Turn that pancake mix into Banana Chip Muffin Tops!  These cake-like protein cookies are easy to take with you in a hurry or throw into the kids lunch.

FlapJacked Banana Chip Protein Muffin Tops Recipe

 

INGREDIENTS
4 TBSP butter (softened)
2 extra large eggs
1/4 cup skim milk
1/3 cup coconut sugar (or brown sugar)
1 cup FlapJacked Banana Hazelnut Protein Pancake Mix
1/3 cup chopped dark chocolate chips

INSTRUCTIONS
Preheat oven to 350 degrees. With an electric mixer, beat eggs, butter, milk and coconut sugar for two minutes. Stir in  Pancake mix and dark chocolate chips and let sit until oven is pre-heated (about 5 minutes). Drop a Tablespoon of batter onto cookie sheet about 2" apart. Bake for 11-13 minutes (until golden brown). ENJOY!
