Banana Bread Waffles

FlapJacked Ambassador Jason Bahamundi created this delicious recipe by combining two of our favorite things: waffles and banana bread. We loved the results so much that we just had to share it. These waffles are delicious without anything on them at all- but feel free to load them up with your favorite toppings.

FlapJacked Banana Bread Waffles Recipe


3 overripe bananas
2 eggs
1 tsp pure vanilla extract
1 1/2 cups water
3 cups any FlapJacked Protein Pancake Mix (we used 1/2 Buttermilk and 1/2 Banana Hazelnut)
1/2 tsp nutmeg
1 tsp cinnamon
1/4 cup finely chopped walnuts

Place the bananas into a large bowl and mash with a fork. Stir in eggs, vanilla and water and blend well. Add in FlapJacked mix (one cup at a time) and stir into the liquid. Add in remaining ingredients and stir well until well incorporated. Heat up your waffle iron. When waffle iron is ready, place 1/2 cup size scoops of batter onto it and cook per manufacturer directions. Repeat until all batter is used (you should have about 9 waffles total). ENJOY!
