Bacon, Egg & Cheese Stuffed Waffles

You might not think of them this way, but waffles are a pretty excellent option for a breakfast on-the-go. The only challenge comes when you add on toppings like butter and syrup- which can create a sticky mess (and make it tough to eat with your hands!). We created this savory waffle that is perfect as is- no toppings required! Think of it as a delicious breakfast casserole- in the form of a waffle.

Place a skillet over medium heat (and spray lightly with nonstick spray). Place both eggs into a small bowl and whisk with a fork for about 30 seconds. Pour eggs into the skillet and stir until cooked (to create scrambled eggs). Remove from heat and let cool for five minutes. Meanwhile, pour the FlapJacked mix and water into a bowl. Stir together to create a thick batter. Stir in cheese, bacon and eggs and mix together well. Add in just a pinch of salt and pepper and stir again. Let batter sit while your waffle iron heats up. When waffle iron is ready, coat with nonstick spray and pour 1/2 of the batter onto it and cook per manufacturer directions. Repeat with other half of the batter. Serve immediately or store in a freezer-safe bag to re-heat later on. ENJOY!
