Oatmeal Biscotti Cookies

If you're into Italian food (and let's be real, who isn't 😉,) then you can't go wrong with these oatmeal biscotti cookies. Providing just the right amount of crunch, this satisfying treat pairs well with a good cup of coffee or dessert wine. Give the cookies a nice dunk and enjoy them for breakfast, dessert or even a late night snack!

Oatmeal Biscotti Cookies

DIRECTIONS

  • Preheat your oven to 350˚ (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the eggs, melted butter, and vanilla extract.
  • Stir in the cookie mix and oats. When the mixture is completely even, place the bowl in the refrigerator for 20 minutes.
  • Scoop the firm dough onto the prepared baking sheet, form into a rectangular log, about 8”x4” and bake for 25 minutes.
  • Let cool for 10 minutes, then slice the log into 12 pieces. Gently lay each slice onto its side, then place back in the oven for 14 minutes, or until the edges are golden brown and the centers are firm when tapped. Let cool completely. Enjoy!
