Mint Chocolate Lasagna

This minty, layered dessert is made with our double chocolate protein cookie mix and is sure to satisfy your sweet tooth! A great alternative to ice cream and super easy to whip up, this is a recipe we know you'll come back to again and again!

  • 3.9 ounce package low-fat instant chocolate pudding
  • ¼ stick butter
  • 8 oz container Cool Whip
  • 2 cups low-fat cold milk
  • 1 tsp mint extract
  • 2-3 drops green food coloring

Mint Chocolate Lasagna


  • Prepare FlapJacked Cookies according to package. Place mixture into a greases 8x8 baking dish. Bake for 9-11 minutes and let cool.
  • Prepare pudding according to package.
  • In medium bowl, take 1 cup of cool whip and stir 1/2 tsp mint extract with 2-3 drops of green food 
coloring together.
  • Spread this mixture over the cookie crust.
  • Spread pudding over cool whip layer.
  • Mix remaining cool whip with 1/2 tsp mint extract and 2-3 drops food coloring. Spread over pudding layer. If you would like, top with mini chocolate chips :)
  • Refrigerate for 30 minutes before serving. Enjoy!
