Individual Silk Pies with Chocolate Cookie Crust

CRUST INGREDIENTS

FILLING INGREDIENTS

  • 2 cups low fat cottage cheese
  • 2 tsp vanilla extract
  • ¼ cup unsweetened cocoa powder
  • 3 tbsp Truvia Spoonable

Individual Silk Pies

DIRECTIONS

  • Preheat your oven to 350˚ (175°C) and spray a cupcake tin with cooking spray.
  • In a large bowl, whisk together the eggs, butter, and water. Stir in the cookie mix. When the mixture is completely even, scoop it into the prepared cupcake tin. Use a spoon to level out the batter.
  • Bake for 10 minutes. Use the bottom of a small cup to press into each cupcake vessel to create a cookie pie crust. Let cool completely, then make the filling.
  • In a blender, add the filling ingredients. Blend until completely smooth.
  • Scoop the filling into the cookie pie crusts.
  • Serve with whipped cream and grated chocolate. Enjoy!
