Carrot Cheesecake Bites

We combined the flavors of carrot cake and cheesecake into a few small, tasty bites! These no-bake treats are great for a mid-day snack or boost of energy before or after a workout.

DIRECTIONS

  • Place graham cracker sheets into a food processor and blend until broken up into fine pieces (about 30 seconds). Pour into a bowl and set aside. Put walnuts into the food processor and blend for about 30 seconds. Add in FlapJacked mix and blend again for about 10 seconds. Add in cream cheese, vanilla, cinnamon and honey and blend for about one minute, until ingredients are well incorporated. Transfer mixture into a bowl and stir in raisins. Place bowl in the refrigerator to chill for one hour.
  • Line a cookie sheet with wax paper and remove the bowl from the refrigerator (set them next to each other). Scoop out a tablespoon of batter and form into a ball with your hands. Roll ball into the graham cracker crumbs to coat it evenly and place on the cookie sheet. Repeat with the remainder of the batter (you should end up with about 30 bites). Place the cookie sheet in the freezer for at least 4 hours. Store frozen in an airtight container (they're best when eaten straight from the freezer!). ENJOY!
