Carrot Cake Waffles (with Maple Cream Cheese Glaze)

All of your favorite carrot cake flavors in the form of a waffle! The delicious maple cream cheese glaze is the perfect topping. These are the perfect treat for a weekend breakfast (and are even decadent enough to enjoy for dessert!).



  • 1/4 cup cream cheese, softened
  • 1/4 cup plain Greek yogurt
  • 1/2 tsp vanilla extract
  • 1 TBSP pure maple syrup
  • 2 TBSP milk (we used skim)

  • In a large bowl, combine FlapJacked mix, egg, water and sugar. Whisk thoroughly to create a semi-thick batter. Gently fold in currants and walnuts. Heat up your waffle iron. When it's ready, lightly coat with non-stick spray and pour 1/5 of the batter (about 1/2 cup) onto the griddle and cook per manufacturer's instructions (waffle size and cooking time will vary for different waffle irons). Repeat with the remaining batter until all waffles are cooked.
  • For the glaze: place the cream cheese and greek yogurt into a bowl and stir together well. Add in the vanilla extract and maple syrup and stir again. Gently stir in the milk to thin out the glaze. Immediately before serving, pour a few spoonfuls of the glaze onto each waffle. ENJOY!
