Banana-Chip Protein Muffin Tops

Turn that pancake mix into Banana Chip Muffin Tops! These cake-like protein cookies are easy to take with you in a hurry or throw into the kids lunch.

DIRECTIONS

  • Preheat oven to 350 degrees.
  • With an electric mixer, beat eggs, butter, milk and coconut sugar for two minutes. Stir in Pancake mix and dark chocolate chips and let sit until oven is pre-heated (about 5 minutes).
  • Drop a Tablespoon of batter onto cookie sheet about 2" apart. Bake for 11-13 minutes (until golden brown). ENJOY!
