FlapJacked Cookie Contest Winners & Recipes!

Thanks to everyone who participated in our FlapJacked Cookie challenge last week over on Instagram. We were floored by all the wonderfully creative submissions.

As a reminder, there were 3 categories the staff here at FlapJacked voted on:
- Best Looking Cookie
- Most Creative Cookie
- Best Video Submission

The winners get an official FlapJacked goodie box full of swag, but more importantly, bragging rights over all the other Instagram cookie chefs out there :)

Without further adieu, here are the winners along with the runners up and honorable mentions. 

Winner: Best Looking Cookie

Snickerdoodles by @stephiiicooks

Here's my submission for @proteinpancakes #flapjackedcookie contest! Taste tested and 2 yr old approved! 😆 The bottoms had a perfect crunch to them, while everything else was nice and soft in texture! I wanted to eat the batter because it smelled soooo good! - Snickerdoodles Makes 12 - 1/4 c + 2 Tbsp granulated sugar 2 Tbsp unsalted butter, room temperature 2 Tbsp vegetable shortening 1 large egg, room temperature 1/4 tsp vanilla extract 1/4 tsp baking powder 106g FlapJacked Buttermilk Pancake Mix Cinnamon Sugar Mixture- 1 Tbsp granulated sugar + 1/2 tsp ground cinnamon, mixed together In a stand mixer, fit with the whisk attachment, combine the sugar, butter and shortening. Mix until combined. Next add the egg and mix well. Remove the whisk attachment and replace with the paddle attachment. Add the vanilla, baking powder and pancake mix. Mix until just combined. Freeze the dough for about 20 minutes. Line a baking sheet with parchment paper. Remove the dough from the freezer and form into 1.25" balls and roll them around in the cinnamon sugar mixture. Place on the lined baking sheet, 2 inches apart and freeze again for 15 minutes. Preheat the oven to 375°F. Remove from freezer and bake for 12-14 minutes or until they are fully cooked. Once finished, immediately transfer them onto a cooling rack. Let cool completely before eating and save any leftovers in an airtight container. Approx. macros - 102 cals/13g Carbs/5.8g Fat/4.6g Protein

Our whole staff agreed these Snickerdoodles looked absolutely amazing. A++ presentation by Stephanie and bonus points for mentioning that 2 year olds like them too :)

White chocolate chips? Strawberries? AND cream cheese?? Yes, please! Anniel brought the heat with this recipe.

Peanut Butter Cookies by @mrsamericanmade

These classic Peanut Butter Cookies by Ana gave us some serious nostalgia. Bonus points for the criss-crossed fork marks!

Can the FlapJacked team be won over by cookies in the shape of the FlapJacked logo? Would we seriously fall for that kind of blatant pandering? You're darn right we would!! Ahhhmazing job Katie and thank you for the extra attention to detail on our logo. You're the bomb.

Almond Apricot Protein Biscotti💖💃#flapjackedcookie using @proteinpancakes pancake and baking mix. Our early morning 🌞"coffee-on-the-porch"☕just got a little more delightful with these #delicious dunkable #cookies. Best time of the day!! 😍❤💑 2 cups Flapjacked Buttermilk Mix 1/2 tsp baking powder 1/2 tsp baking soda Pinch of Himalayan Pink Salt 4 T. Butter 2 Tbsp. Coconut oil 1/2 cup coconut sugar or other sweetener (adjust to your liking) 2 eggs 1/4 tsp anise (optional) 1/2 tsp almond extract 1 tsp vanilla extract 6 oz. Dried apricots, chopped 1/2 cup almonds, measure then chop Mix dry ingredients with whisk. Blend butter, oil, sugar, anise, and extracts in separate bowl. Pour dry ingredients into wet and mix well. Batter will be thick. Stir in fruit and nuts. Form into 2 logs, about 2 inches thick and bake on parchment lined sheet at 350 for 20-25 minutes. Remove and cool for 10. Using serrated knife, slice along the bias. Good morning #fitfam! I'm having cookies for breakfast as my #flapjackedcookie contest entry. This was such a good flavor combo and I'm a fan of anything with ginger due to its anti-inflammatory properties. This unique recipe for Ginger Lime Cookies left us all very intrigued and eager to try it out in our own kitchens at home. Nice work Meghan!!

Apple Cinnamon Cookies by @erincooper_bakesandlifts 

Erin's video for Apple Cinnamon cookies was already going great, but the ending with the drizzle?? That sealed the deal for the FlapJacked staff. Also, be sure to check out Erin's Instagram page for proof that you can, in fact, get shredded by eating lots of FlapJacked pancakes! Okay, that and maybe lifting weights a little bit :)

Double Chocolate Espresso Cookies by @rachel_wellness

Double chocolate espresso protein cookies using @proteinpancakes buttermilk mix! These cookies are clean, healthy, and delicious! They are sugar free and packed full of flavor, protein, and fiber, plus the espresso will give you that extra edge you need! Recipe: 2 1/2 cups @proteinpancakes buttermilk flapjacked mix • 1/2 tsp baking powder • 1/2 tsp baking soda • 1/2 tsp salt • 1/2 cup coconut oil • 1 cup stevia • 6 tbsp cage free egg whites • 2 tsp vanilla • 2 tbsp @lilys_sweets_chocolate stevia chocolate chips • 1 shot espresso (or sub in instant coffee) • bake 350 degrees for 6-8 minutes • batch makes 24 cookies • macros 3 protein 4 carbs 6 fats that's 82 calories per cookie!
